The St. Regis Mumbai appoints Bruno Fuentes to lead Penthouse restaurants

Hospitality veteran joins from Bangkok to strengthen the luxury hotel’s dining destination

MUMBAI: The St. Regis Mumbai is raising the bar for its rooftop dining experience. The St. Regis Mumbai has appointed Bruno Fuentes as director of restaurants, Penthouse, as it looks to strengthen its position in Mumbai’s premium dining and nightlife scene.

Fuentes joins the luxury hotel with more than a decade of international food and beverage experience spanning Los Angeles, Hong Kong and Bangkok. He will oversee the Penthouse dining destination, focusing on restaurant operations, guest experience and commercial strategy.

A graduate of California State University, Long Beach, with a degree in hospitality management, Fuentes most recently led Guilty Bangkok and Aqua Bar at Anantara Siam Bangkok Hotel. During his tenure, Guilty became Bangkok’s highest-ranked Peruvian restaurant on TripAdvisor through a combination of guest engagement and programming initiatives.

Earlier in his career, he managed Popinjays Rooftop Restaurant & Bar at The Murray, Hong Kong, helping establish the venue as one of the city’s prominent rooftop dining destinations.

Speaking on his new role, Fuentes said Mumbai’s blend of heritage and modernity was a major draw.

“I’ve always admired the warmth of Indian people and I’m excited to experience that every day. I’m equally looking forward to exploring the city’s dynamic food and beverage scene, from iconic local favourites like vada pav to the innovative restaurants and bars that are constantly pushing creative boundaries,” he said.

Fuentes added that his approach centres on creating memorable hospitality experiences rather than simply serving food and drinks.

“Guests may remember what they ate or drank, but they never forget how a place made them feel. For me, it’s about creating an atmosphere where every detail feels considered, every interaction feels genuine and every visit leaves guests wanting to come back,” he said.

The appointment comes as luxury hotels increasingly invest in destination dining to attract both in-house guests and local patrons. With Fuentes at the helm, The St. Regis Mumbai is aiming to further elevate Penthouse as a go-to venue for premium dining, cocktails and nightlife in the city.
